Hi there,

I have one Maxtor 120gb ATA HDD and a 250gb S-ATA Seagate HDD + an Asus A87NX-E Deluxe Mobo.

Could anyone be kind enough to explain what RAID is?

Hi there :).

RAID is a technology whereby you can set up two physical disks to run one volume, meaning that if one hard drive goes down, the data is still available.

Well, actually, there are loads of different types of RAID (some don't have the redundancy I described above) and they can do different things depending on what setup you want. The one I described above is RAID Type 1.
