FWIW, I had loads of issues with twin cards in Ubuntu, but none with single ones.

The Ubuntu default ATI and NVidia drivers are quite old too, which makes life hard with new cards.

The only thing I could suggest, if you haven't tried already is to have a go with nVidia drivers from their site: http://www.nvidia.com/object/unix.html

I've never had a PC with more than one card and don't know what issues there may be with SLI.

Ubuntu started using a thing to detect monitor sizes recently, it's woefully under-tested. You'll need to **** with your xorg.conf to get it to work.
